For the Macarons

  • 1 3/4 cup almond flour
  • 1 3/4 cup powdered sugar
  • 4 large egg whites, room temperature
  • 1/2 tsp cream of tartar
  • 1/4 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1 pinch salt

  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/2 tsp vanilla extract

  1. Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, sift together the almond flour and powdered sugar until well combined.
  3. In a separate bowl, beat the egg whites with cream of tartar until foamy.
  4. Gradually add granulated sugar and continue beating until stiff peaks form, ensuring the mixture is glossy and holds its shape.
  5. Carefully fold in the almond flour mixture, vanilla extract, and salt until fully combined, while being careful not to deflate the meringue.
  6. Transfer the batter to a piping bag fitted with a round tip and pipe small rounds onto the prepared baking sheets, spacing them evenly apart.
  7. Gently tap the baking sheets on the counter to release any air bubbles, then allow the macarons to rest at room temperature for 30 minutes until a skin forms on the surface.
  8. Bake for 15-18 minutes, rotating the sheets halfway through, until the macarons are set and easily lift from the parchment paper.
  9. While the macarons cool, make the buttercream filling by beating the butter, powdered sugar, and vanilla extract together until smooth and fluffy.
  10. Once the macarons are completely cool, pipe or spread the buttercream onto the flat side of half of the macarons and sandwich them with the remaining halves, pressing gently to adhere.
  11. Allow the filled macarons to rest for a few hours or overnight to develop the flavors and achieve the ideal texture.
