Ingredients

  • 1 whole cooked chicken breast, shredded
  • 1 cup shredded cheddar cheese
  • 1/2 cup canned black beans, drained and rinsed
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • 4 medium flour tortillas

Instructions

  1. Preheat the air fryer to 360°F (182°C).
  2. In a mixing bowl, combine shredded chicken, cheddar cheese, black beans, red bell pepper, red onion, cilantro, chili powder, cumin, and garlic powder.
  3. Lay out a tortilla and spoon a quarter of the chicken mixture onto one half of the tortilla.
  4. Fold the other half of the tortilla over the filling to create a half-circle.
  5. Place the quesadilla in the air fryer basket and cook for 5 minutes, then using a spatula, flip and cook for an additional 5 minutes, or until crispy.
  6. Repeat cooking with the remaining tortillas and filling.
  7. Slice the quesadillas into wedges and serve hot.
