Bone-in chicken pieces are seasoned, baked until juicy, then brushed with barbecue sauce and returned to the oven so the glaze caramelizes into a sticky, deeply flavored crust. It's a low-effort weeknight dinner that still delivers the smoky-sweet char of grilled barbecue chicken without firing up the grill.

Ingredients

  • 8 bone-in, skin-on chicken thighs and drumsticks
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1 1/2 cups barbecue sauce
  • 2 tablespoons fresh parsley, chopped, for garnish

Method

  1. Preheat the oven to 400°F (200°C) and line a 9x13-inch baking pan with foil.

  2. Pat the chicken pieces dry with paper towels and arrange them skin-side up in the prepared pan.

  3. Drizzle the chicken with olive oil, then sprinkle evenly with salt, pepper, garlic powder, smoked paprika, and onion powder, rubbing to coat all sides.

  4. Bake uncovered for 30 minutes.

  5. Remove the pan from the oven and brush each piece generously with barbecue sauce, using about half of the sauce.

  6. Return the pan to the oven and bake for another 15 minutes.

  7. Brush the chicken with the remaining barbecue sauce and bake 5 more minutes, until the internal temperature reaches 165°F (74°C) and the glaze is caramelized at the edges.

  8. Let the chicken rest for 5 minutes, then garnish with chopped parsley before serving.
