Bean Stew (Loubia)

Bean Stew, also known as Loubia, is a wholesome dish that’s excellent for cooler days. It features tender beans simmered in a savory tomato-based broth infused with aromatic spices. Ingredients

  • 2 cans white beans, drained and rinsed

  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a large pot, sauté the onion and garlic over medium heat until soft.
  2. Add the diced tomatoes, vegetable broth, cumin, paprika, cayenne pepper, salt, and black pepper.
  3. Bring the mixture to a boil, then reduce heat to low and simmer for 45 minutes, allowing the flavors to meld.
  4. Add the white beans and continue to simmer for another 15 minutes, stirring occasionally.
  5. Taste and adjust seasoning if necessary before serving.
