  • 1 14 oz can crushed tomatoes
  • 1 cup beef broth
  • 1 tsp sugar

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a large oven-safe pot, heat the olive oil over medium-high heat.
  3. Season the lamb pieces with salt and pepper, then add them to the pot to brown on all sides. Remove the lamb from the pot once browned.
  4. Add the onion and garlic to the pot and sauté until softened, about 5 minutes.
  5. Stir in the oregano and tomato paste, cooking for 1 minute to release the flavors.
  6. Pour in the red wine, scraping the bottom of the pot to deglaze and incorporate the browned bits.
  7. Add the crushed tomatoes, beef broth, and sugar to the pot, stirring to combine.
  8. Return the lamb to the pot, ensuring it is submerged in the sauce.
  9. Bring the mixture to a simmer, cover the pot with a lid, and transfer it to the preheated oven.
  10. Braise in the oven for 2 hours, or until the lamb is tender and the sauce has thickened.
  11. Remove from the oven, let it rest for a few minutes, and adjust seasoning with salt and pepper if needed before serving.
