Ingredients

  • 2 whole branzino, cleaned and gutted
  • 4 cup kosher salt

  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the kosher salt with just enough water to achieve a texture similar to wet sand.
  3. Spread a thin layer of the salt mixture on a baking sheet to create a bed for the fish.
  4. Stuff the cavity of each branzino with a mix of fresh herbs and lightly brush the exterior with olive oil.
  5. Place the branzino on the salt bed and cover each fish completely with the remaining salt mixture, pressing gently to ensure it adheres.
  6. Bake in the preheated oven for about 20 minutes, or until the salt crust is firm and slightly golden.
  7. Remove the branzino from the oven and allow them to rest for 5 minutes before carefully cracking open the salt crust using the back of a spoon.
  8. Carefully remove the branzino from the salt crust and serve immediately, flaking the tender fish away from the bones.
