Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • 1 tablespoon butter
  • 4 flour tortillas
  • 1 cup jalapeño Jack cheese, shredded
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green onions, sliced
  • 1 tablespoon olive oil

Instructions

  1. Whisk together eggs, milk, salt, and pepper in a bowl.
  2. Heat butter in a skillet over medium heat. Add the egg mixture and cook, stirring until scrambled and set. Remove from skillet and set aside.
  3. In the same skillet, heat olive oil over medium heat. Sauté red bell pepper and green onions until softened.
  4. Lay out two flour tortillas. Divide scrambled eggs and vegetables evenly between them, sprinkle with jalapeño Jack cheese.
  5. Top each with another tortilla, pressing down gently.
  6. Cook each quesadilla in the skillet until the tortillas are golden and cheese is melted, about 3 minutes per side.
  7. Cut each quesadilla into wedges and serve immediately.
