  • 1/4 cup coconut oil, melted

Instructions

  1. Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the oats, almonds, walnuts, pumpkin seeds, sunflower seeds, and flaxseeds.
  3. In a separate bowl, whisk together the maple syrup, melted coconut oil, vanilla extract, and cinnamon until smooth.
  4. Pour the wet ingredients over the dry ingredients and stir until everything is evenly coated.
  5. Spread the mixture onto the prepared baking sheet, ensuring an even layer.
  6. Bake for 20-25 minutes. Halfway through, stir the mixture to ensure even baking and to prevent burning.
  7. After baking, remove the sheet from the oven and let the granola cool on the sheet. It will crisp up as it cools.
  8. Once cool, break the sheet into clusters of your preferred size.
  9. Serve as a snack or as a topping over yogurt or ice cream.
