Ingredients

  • 1 pound chicken thighs, boneless, skinless, sliced thinly
  • 4 cups chicken broth
  • 1 block tofu, cubed
  • 2 cups napa cabbage, chopped
  • 1 cup shiitake mushrooms, sliced
  • 1 piece konjac noodles
  • 1 bunch green onions, sliced
  • 1 piece carrot, sliced
  • 1 Tbsp soy sauce
  • 1 Tbsp mirin

Instructions

  1. In a large pot, bring the chicken broth to a simmer over medium heat.
  2. Add the sliced chicken thighs and simmer for 10 minutes until partially cooked.
  3. Add the tofu, napa cabbage, shiitake mushrooms, konjac noodles, green onions, and carrot to the pot.
  4. Gently stir in the soy sauce and mirin until evenly distributed.
  5. Continue to simmer for another 15-20 minutes until the chicken is cooked through and the vegetables are tender.
