Ingredients

  • 1 cup dried chickpeas, soaked overnight
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, chopped
  • 1 inch piece ginger, grated
  • 2 whole garlic, minced
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 2 cups all-purpose flour
  • 1/2 cup yogurt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda

Instructions

  1. Soak the chickpeas overnight, then drain and rinse them before use.
  2. Heat oil in a pan over medium heat. Add cumin seeds and allow them to splutter for a few seconds.
  3. Add the chopped onions, grated ginger, and minced garlic. Saute for 2 to 3 minutes until the onions become translucent.
  4. Stir in the chopped tomatoes, coriander powder, turmeric, and salt. Cook for about 5 minutes until the tomatoes are soft and the oil starts to separate.
  5. Add the soaked chickpeas and enough water to cover them. Stir in the garam masala, then cover and cook under pressure until the chickpeas are tender, about 10-15 minutes under pressure.
  6. To prepare the Bhature, combine flour, yogurt, baking powder, baking soda, and a pinch of salt in a bowl. Knead the mixture into a soft dough. Let it rest for 30 minutes.
  7. Divide the dough into equal-sized balls. Roll each ball into a round disc, about 6 inches in diameter.
  8. Heat oil in a deep pan. Deep fry each disc until golden brown and puffed up.
  9. Serve the Chole hot with freshly fried Bhature.
