Ingredients

  • 8 oz elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the elbow macaroni according to package instructions until al dente, then drain and set aside.
  3. In a large saucepan, melt the butter over medium heat. Stir in the flour, cooking and stirring constantly until the mixture is smooth and bubbly.
  4. Gradually whisk in the milk, and continue cooking and stirring until the sauce thickens and starts to bubble.
  5. Add the cheddar cheese, mozzarella cheese, salt, and pepper to the sauce and stir until the cheese is melted and the sauce is smooth.
  6. Combine the cooked macaroni with the cheese sauce, mixing well to ensure all pasta is coated.
  7. Transfer the macaroni and cheese mixture to a 9-inch by 13-inch baking dish.
  8. In a small bowl, mix the breadcrumbs with olive oil. Sprinkle the breadcrumb mixture evenly over the mac and cheese.
  9. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the edges are bubbling.
  10. Allow to cool for a few minutes before serving.
