Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 1 cup dried cranberries
  • 1/2 cup pistachios, shelled and chopped
  • 1/4 cup honey
  • 1 egg
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8" x 8" baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, combine rolled oats, flour, brown sugar, and salt. Mix well.
  3. Add melted butter and stir until the mixture resembles coarse crumbs.
  4. Press half of the oat mixture firmly into the bottom of the prepared baking pan to form an even layer.
  5. In a separate bowl, whisk together honey, egg, and vanilla extract until smooth.
  6. Stir cranberries and chopped pistachios into the honey mixture.
  7. Spread the cranberry mixture over the oat base in the baking pan.
  8. Crumble the remaining oat mixture evenly over the top, pressing gently to adhere.
  9. Bake in the preheated oven for 25-30 minutes, until the top is golden brown.
  10. Allow the bars to cool completely in the pan. Lift out using parchment overhang and cut into 16 squares.
