Ingredients

  • 1 28 oz can crushed tomatoes

  • 1 bunch fresh sage leaves
  • 1 lb pappardelle pasta

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add cubed wild boar meat and sear until browned on all sides.
  3. Stir chopped onion and minced garlic into the pot, sauté until the onion is translucent, about 3-4 minutes.
  4. Mix in crushed tomatoes and red wine, then bring the mixture to a simmer.
  5. Add fresh sage leaves to the sauce.
  6. Cover the pot and allow it to simmer for 2 hours, stirring the sauce occasionally to prevent sticking.
  7. Towards the end of the cooking time, bring a large pot of salted water to boil. Cook pappardelle pasta according to the package instructions until al dente.
  8. Drain the pasta and serve topped with the wild boar sauce.
  9. If desired, garnish with additional sage leaves.
