Ingredients

  • 1 1/2 lbs oxtail, cut into pieces
  • 1 lb tripe, cleaned and cut into pieces
  • 2 quarts water
  • 1 cup peanut butter
  • 1 cup ground roasted rice
  • 1 cup annatto water
  • 1 lb string beans, cut into 2-inch pieces
  • 1 lb eggplant, sliced
  • 4 pieces banana heart, sliced
  • 1 cup peanut oil
  • 1 cup onion, chopped
  • 4 cloves garlic, minced
  • 1 piece eggplant, charred

Instructions

  1. In a large pot, bring the water to a boil. Add the oxtail and tripe, and simmer over medium heat until tender, about 1 1/2 to 2 hours. Skim off any scum that rises to the surface. Once cooked, set aside the meat and reserve the broth.
  2. In a separate pan, heat the peanut oil over medium heat. Sauté the garlic and onions until they are fragrant and the onions turn translucent, about 2 to 3 minutes.
  3. Add the boiled oxtail and tripe to the pan with the garlic and onions. Pour in the annatto water and simmer for an additional 10 minutes to meld the flavors.
  4. Stir in the peanut butter and ground roasted rice. Continue to simmer until the sauce thickens, about 10 to 15 minutes. If the sauce becomes too thick, add some reserved broth to reach the desired consistency.
  5. Add the string beans, sliced eggplant, and banana heart to the pan. Cook until the vegetables are tender, about 5 to 7 minutes.
  6. Adjust the seasoning with salt and pepper according to taste.
  7. Serve the Kare-Kare hot, accompanied by bagoong (shrimp paste) on the side for an authentic Filipino experience.
