Ingredients

  • 1 pound ground beef
  • 2 cups onions, thinly sliced
  • 1 cup bread crumbs
  • 1/2 cup milk
  • 2 tablespoons unsalted butter
  • 1/4 cup Worcestershire sauce
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 pounds potatoes, peeled and diced
  • 1/4 cup heavy cream
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, melt the butter and add the sliced onions.
  3. Cook onions for 15 minutes until they are deeply caramelized, stirring often.
  4. In a bowl, combine ground beef, bread crumbs, milk, 2 eggs, Worcestershire sauce, and caramelized onions.
  5. Add 1 teaspoon of salt and 1/2 teaspoon of black pepper to the meat mixture.
  6. Mix until just combined. Shape into a loaf and place in a baking dish.
  7. Bake in the preheated oven for about 50 minutes.
  8. While the meat loaf bakes, boil the diced potatoes in a large pot until tender, about 20 minutes.
  9. Drain the potatoes and return them to the pot.
  10. Add heavy cream, butter, and salt to taste. Mash until smooth and creamy.
  11. Once meat loaf is cooked, let it rest for 5 minutes before slicing.
  12. Serve slices of meat loaf with a generous scoop of mashed potatoes.
