Thick tuna steaks are marinated briefly, then grilled hot and fast to keep the centers rare and tender. A savory sesame ginger sauce doubles as marinade and finishing drizzle, adding depth without masking the fish's clean flavor. Serve over rice or greens for a light dinner that comes together in under 30 minutes.
Ingredients
- 4 tuna steaks, about 6 ounces each
- 1/3 cup soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 1 tablespoon toasted sesame seeds
- 2 green onions, thinly sliced
- 1 tablespoon vegetable oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Method
-
In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, grated ginger, and minced garlic to make the sesame ginger sauce.
-
Pour half of the sauce into a shallow dish and add the tuna steaks, turning to coat. Reserve the remaining sauce for serving.
-
Marinate the tuna steaks at room temperature, covered, for 15 minutes.
-
Preheat a grill or grill pan over high heat until very hot, about 5 minutes.
-

-
Grill the tuna steaks for 2 minutes per side for rare, or up to 3 minutes per side for medium-rare, flipping once.

Transfer the tuna to a cutting board and let rest for 3 minutes before slicing against the grain.
-
Drizzle the sliced tuna with the reserved sesame ginger sauce and top with toasted sesame seeds and sliced green onions.
