Harissa Roasted Carrot and Chickpea Stew

  • 1 lb carrots, peeled and cut into chunks
  • 1 15 oz can chickpeas, drained and rinsed
  • 2 Tbsp olive oil
  • 2 Tbsp harissa paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 4 cups vegetable broth
  • 1 cup diced tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • fresh cilantro, chopped, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the carrots with 1 tablespoon of olive oil, harissa paste, cumin, and coriander. Mix well to coat evenly.
