Ingredients

  • 1 cup basmati rice
  • 2 cups mixed vegetables, chopped (carrots, peas, potatoes, beans)
  • 1 whole onion, thinly sliced
  • 1 inch ginger, minced
  • 3 cloves garlic, minced
  • 2 tsp cumin seeds
  • 1 Tbsp garam masala
  • 1/2 tsp turmeric powder
  • 1 tsp chili powder
  • 1/4 cup yogurt
  • 2 Tbsp ghee
  • 1 handful fresh cilantro, chopped

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch. Soak the rice in water for 20 minutes, then drain.
  2. In a large pan, heat the ghee over medium heat and add the cumin seeds. Stir until they begin to splutter, then add the sliced onions, minced ginger, and garlic. Sauté until the onions turn golden brown, approximately 5 minutes.
  3. Add the mixed vegetables to the pan and cook for 5-7 minutes until they are slightly tender. Stir in the garam masala, turmeric, and chili powder, ensuring the vegetables are well coated with the spices.
  4. Spread the soaked and drained rice evenly over the vegetables. Add 2 cups of water and a pinch of salt. Drizzle the yogurt over the rice. Cover the pan and cook on low heat for 20-25 minutes until the rice is tender and the water is fully absorbed.
  5. Once cooked, let the biryani rest for 5 minutes before gently fluffing with a fork. Garnish with fresh cilantro before serving.
