Chickpea Flour Socca with Toppings

Chickpea flour socca, originating from Nice, France, is a savory pancake that serves as a versatile base for various toppings. This gluten-free dish is simple to prepare and features a crispy exterior with a soft interior, suitable for any mealtime. The batter is easy to mix, offering flexibility in topping choices ranging from Mediterranean-inspired olives and feta to spicy jalapeños and cheddar. Enjoy this dish as a light lunch, appetizer, or snack for a delightful taste of the French Riviera.

Ingredients

  • 1 cup chickpea flour
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1 1/4 cups water
  • 2 Tbsp olive oil
  • 1/4 cup fresh herbs, chopped (e.g., parsley, cilantro)
  • 1/4 cup olives, sliced
  • 1/4 cup feta cheese, crumbled

Instructions

  1. Preheat the oven to 450°F (230°C) and place a cast-iron skillet inside to heat.
  2. In a bowl, whisk together chickpea flour, salt, cumin, paprika, water, and 1 tablespoon of olive oil until smooth.
  3. Carefully remove the hot skillet from the oven, add 1 tablespoon of olive oil, and swirl to coat the bottom.
  4. Pour in the batter evenly. The preheated skillet will help to start cooking the bottom of the socca immediately, contributing to its crisp texture.
  5. Bake for 15-20 minutes until the edges are golden and crispy, and the center is set.
  6. Remove from oven, evenly distribute the chopped herbs, sliced olives, and crumbled feta cheese over the socca.
  7. Return the skillet to the oven and bake for an additional 3-5 minutes, or until the cheese is slightly melted.
  8. Cut into wedges and serve warm, optionally garnished with additional fresh herbs.
