This St. Louis-style favorite starts with pork shoulder steaks seared over high heat, then simmered low and slow in barbecue sauce until the meat turns tender and the sauce caramelizes into a sticky glaze. It's a backyard grilling staple, often served with white bread and sweet tea.

Ingredients

  • 4 bone-in pork shoulder steaks, about 3/4-inch thick
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups barbecue sauce
  • 1/2 cup water
  • 1 yellow onion, sliced into rings

Method

  1. Pat the pork steaks dry with paper towels and season both sides evenly with salt, pepper, garlic powder, and onion powder.

  2. Heat the vegetable oil in a large skillet or on a grill over high heat until shimmering.

  3. Sear the pork steaks for 3 to 4 minutes per side until well browned.

  4. Transfer the seared steaks to a large Dutch oven or deep skillet and scatter the onion rings over the top.

  5. Pour the barbecue sauce and water over the steaks, making sure they are mostly submerged.

  6. Bring the sauce to a simmer over medium heat, then reduce heat to low and cover.

  7. Simmer covered, turning occasionally, until the pork is fork-tender, about 1 hour 15 minutes.

  8. Uncover and simmer another 15 minutes to thicken the sauce, spooning it over the steaks occasionally.

  9. Remove from heat and let the steaks rest for 5 minutes before serving with extra sauce spooned over the top.
