Ingredients

  • 1 block firm tofu, pressed and cubed
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1/4 cup cornstarch
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 whole bell pepper, sliced
  • 1 cup snow peas
  • 1 whole carrot, julienned

Instructions

  1. Mix the soy sauce, hoisin sauce, and rice vinegar in a bowl. Add the tofu cubes and marinate for 30 minutes.
  2. Dredge the marinated tofu in cornstarch. Heat the vegetable oil in a pan over medium-high heat and fry the tofu until crispy, about 5-7 minutes. Set aside.
  3. In the same pan, sauté the garlic and ginger for about 30 seconds until fragrant. Add the bell pepper, snow peas, and carrots. Cook for 3-4 minutes until the vegetables are crisp-tender.
  4. Return the tofu to the pan and pour over any remaining marinade. Stir well to coat the tofu and vegetables evenly, cooking for another 2 minutes.
  5. Remove from heat and serve immediately.
