Ingredients
- 8 oz rice noodles
- 2 tbsp vegetable oil
- 1 cup chicken breast, cooked and shredded
- 1 cup shrimp, peeled and deveined
- 1 cup carrots, julienned
- 1 cup cabbage, shredded
- 1 cup green beans, chopped
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 1 whole onion, chopped
- 1 whole lemon, sliced for garnish
Instructions
- Soak rice noodles in hot water for 10 minutes. Drain and set aside.
- In a wok, heat vegetable oil over medium-high heat. Add garlic and onion, sauté until fragrant, about 2 to 3 minutes.
- Add chicken, shrimp, carrots, cabbage, and green beans. Stir-fry until shrimp is pink and vegetables are tender, approximately 4 to 5 minutes.
- Push ingredients to the side of the wok. Add soaked noodles and soy sauce to the center, tossing gently to combine with other ingredients.
- Continue cooking, stirring frequently, until noodles are heated through, about 3 to 4 minutes.
- Serve hot, garnished with lemon slices.
