This dish, usually made with butterflied fish grilled over a wood fire, captures a smoky and charred flavor that is beloved along Mexico’s Pacific coast. It’s adaptable for a summer barbecue or festive gathering. Paired with fresh tortillas, salsa, and avocado, this vibrant dish offers a culinary escape to the sunlit beaches of Mexico, with its zesty and spicy kick complementing the fish.
