Ingredients

  • 1 cup arborio rice
  • 4 cups vegetable broth, divided

  • 1/2 cup hot water
  • 1/2 cup dry white wine

  • 1/2 cup parmesan cheese, grated
  • 1 Tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Soak the dried porcini mushrooms in hot water for 20 minutes in a small bowl. Strain the mushrooms, reserving the soaking liquid.
  2. Heat the vegetable broth in a saucepan until simmering and keep it warm over low heat.
  3. In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat.
  4. Add the chopped onion to the skillet and cook for about 5 minutes until translucent.
  5. Stir in the Arborio rice and cook for 2 minutes until slightly toasted.
  6. Pour in the white wine, cooking until it evaporates, stirring constantly.
  7. Start adding the warm broth to the rice, one ladle at a time, stirring continuously and allowing the liquid to be absorbed before adding more.
  8. After adding half of the broth, pour in the reserved mushroom soaking liquid, leaving any sediment behind.
  9. Continue adding the broth while stirring, until the rice is creamy and al dente, about 18-20 minutes in total.
  10. Stir in the soaked mushrooms, Parmesan cheese, remaining butter, salt, and pepper.
  11. Remove from heat and let the risotto rest for a few minutes before serving.
  12. Garnish with additional Parmesan cheese and a drizzle of olive oil before serving.
