Ingredients

  • 2 pounds whole fish, cleaned and scaled
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 cup pine nuts, toasted
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  3. Add the sliced onions and cook for about 10 minutes until caramelized.
  4. Stir in the minced garlic, ground cumin, and paprika, and cook for another 2 minutes.
  5. Place the whole fish in a baking dish and spoon the onion mixture over the top.
  6. Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through.
  7. Remove from the oven and sprinkle toasted pine nuts and chopped parsley over the dish before serving.
