Ingredients
- 1 pound fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 cup ricotta cheese
- 1 cup fresh dill, chopped

- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 package phyllo dough, thawed
- 1/2 cup unsalted butter, melted
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the chopped spinach, feta cheese, ricotta cheese, dill, parsley, onion, garlic, and olive oil.
- Place a sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Repeat with 5 more phyllo sheets, layering each on top of the other.
- Cut the layered phyllo stack into 4 strips lengthwise. Place a spoonful of the spinach mixture at the bottom of each strip and fold into triangles.
- Brush the tops of the triangles with beaten egg wash and place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until the triangles are golden brown and crisp. Serve with tzatziki sauce.
- For the tzatziki sauce, combine Greek yogurt, grated cucumber, garlic, dill, lemon juice, and salt in a bowl. Mix well and refrigerate until ready to serve.
