Ingredients

  • 4 medium artichokes

  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Trim the stems and remove the tough outer leaves from the artichokes.
  3. In a bowl, combine the cooked rice, parsley, mint, dill, onion, tomato, olive oil, salt, and black pepper.
  4. Fill the center of each artichoke with the rice mixture, pressing it down gently.
  5. Arrange the stuffed artichokes in a baking dish. Add a small amount of water to the bottom of the dish.
  6. Cover the dish with foil and bake for about 45 minutes, or until the artichokes are tender.
  7. Optionally, garnish with additional herbs before serving.
