Ingredients

  • 4 medium bell peppers
  • 1 cup rice, uncooked
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the rice, onion, garlic, diced tomatoes, parsley, mint, olive oil, cumin, coriander, and a pinch of salt and pepper.
  4. Stuff the bell peppers with the rice mixture and place them upright in a baking dish.
  5. Pour a small amount of water into the bottom of the dish to prevent sticking.
  6. Cover the dish with foil and bake for 45-50 minutes until the peppers are tender and the rice is cooked through.
  7. Remove the foil and bake for an additional 10 minutes until the tops are lightly browned.
