Ingredients

  • 2 cans coconut milk

  • 4 leaves kaffir lime leaves
  • 4 Tbsp fish sauce
  • 2 Tbsp lime juice
  • 2 Tbsp palm sugar
  • 2 Tbsp thai chili paste
  • 4 cups water

Instructions

  1. Bring 4 cups of water to a boil in a pot over medium heat.
  2. Add the smashed lemongrass, sliced galangal, and kaffir lime leaves to the pot. Simmer for 5 minutes to infuse the flavors.
  3. Add the thinly sliced chicken breast and sliced mushrooms to the pot. Cook until the chicken is cooked through, about 10 minutes.
  4. Stir in the coconut milk, fish sauce, lime juice, palm sugar, and Thai chili paste. Simmer for another 5 minutes, allowing the flavors to meld.
  5. Taste the soup and adjust the seasoning as needed, adding more fish sauce or lime juice to balance the flavors.
  6. Serve the soup hot in bowls, optionally garnished with cilantro or sliced chilies.
