Ingredients

  • 4 medium bell peppers
  • 1 12 oz can tuna, drained
  • 1 cup quinoa, cooked
  • 1/2 cup red onion, chopped
  • 1/2 cup celery, chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup lemon juice, freshly squeezed
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a mixing bowl, combine the drained tuna, cooked quinoa, chopped red onion, chopped celery, chopped parsley, freshly squeezed lemon juice, olive oil, garlic powder, salt, and black pepper.
  4. Fill each bell pepper evenly with the tuna and quinoa mixture.
  5. Place the stuffed bell peppers in a baking dish and cover with foil.
  6. Bake in the preheated oven for 25-30 minutes, until the peppers are tender.
