Ingredients

  • 1 tablespoon za'atar
  • 2 tablespoons olive oil
  • 1 cup hummus
  • 1 large flatbread
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the red bell pepper, zucchini, red onion, and cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper.
  3. Lay the vegetables on a baking sheet and roast for 20-25 minutes, until the vegetables are tender and slightly charred.
  4. Spread the hummus over the flatbread, leaving a small border around the edges.
  5. Scatter the roasted vegetables over the hummus.
  6. Sprinkle the za'atar over the top.
  7. Drizzle the remaining olive oil over the flatbread.
  8. Bake the flatbread in the oven for 10-12 minutes, until the edges are crisp.
  9. Slice and serve warm.
