These almond cookies bring together ground almonds and almond extract for a rich, nutty flavor with a slightly crisp edge and soft center. A whole almond pressed into each center adds crunch and a classic bakery look, making them well suited for tea time or holiday cookie trays.
Ingredients
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/2 cup almond flour
- 1 large egg
- 1 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 24 whole almonds, for topping
- 1 large egg, beaten, for egg wash
Method
-
In a large bowl, cream the softened butter and granulated sugar together with a hand mixer until light and fluffy, about 3 minutes.
-
Beat in the almond flour, egg, almond extract, and vanilla extract until well combined.
-
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
-
Add the dry ingredients to the butter mixture in two additions, mixing on low speed until just combined and a soft dough forms.
-
Cover the dough and chill in the refrigerator until firm enough to handle, about 30 minutes.
-
Preheat the oven to 350°F and line two baking sheets with parchment paper.
-
Roll the dough into 24 balls, about 1 tablespoon each, and place them 2 inches apart on the prepared baking sheets.
-
Flatten each ball slightly with your palm, brush the tops with beaten egg, and press one whole almond into the center of each cookie.
-
Bake in the preheated oven until the edges are lightly golden, 12 to 15 minutes.
-
Cool the cookies on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
