Ingredients
- 8 whole anchovies, cleaned
- 1 piece kombu (dried kelp), about 4 inches
- 6 cups water
- 1 yellow onion, quartered
- 2 stalks celery, roughly chopped
- 1 carrot, roughly chopped
- 3 cloves garlic, smashed
- 1 piece fresh ginger, sliced, about 1 inch
- 1 bay leaf
- 1/4 cup white wine
- 1/2 teaspoon whole black peppercorns
- salt, to taste
Method

Soak the kombu in the water in a 6-quart saucepan for 10 minutes to soften and release its flavor.

Add the anchovies, onion, celery, carrot, garlic, ginger, bay leaf, and peppercorns to the saucepan with the kombu and water.

Pour in the white wine and set the pan over medium-high heat.

Bring the mixture to a gentle boil, then reduce the heat to low and skim off any foam that rises to the surface.

Simmer uncovered, maintaining a gentle bubble, for 1 hour 30 minutes to extract flavor from the anchovies and aromatics.

Remove the pan from heat and strain the stock through a fine-mesh sieve lined with cheesecloth into a large bowl, discarding the solids.
