This open-faced toast pairs rich, buttery avocado with the savory bite of olive oil-packed sardines, brightened with lemon juice and chili flakes. It comes together in minutes with no cooking beyond toasting the bread, making it a quick option for breakfast, lunch, or a light snack. A scattering of fresh herbs and a pinch of flaky salt round out the flavors.

Ingredients

  • 4 slices sourdough bread
  • 1 ripe avocado
  • 1 tablespoon lemon juice
  • 2 cans sardines in olive oil, drained
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon flaky sea salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1 tablespoon extra-virgin olive oil, for drizzling

Method

  1. Toast the sourdough slices in a toaster or under a broiler until golden and crisp, about 3 minutes.

  2. Halve the avocado, remove the pit, and scoop the flesh into a small bowl. Add the lemon juice and mash with a fork until mostly smooth with some texture remaining.

  3. Season the mashed avocado with half of the salt and pepper, then spread evenly over the toasted bread slices.

  4. Arrange the drained sardines on top of the avocado, gently flattening them with a fork if desired.

  5. Sprinkle the toasts with red pepper flakes, parsley, and the remaining salt and pepper.

  6. Drizzle with olive oil and serve immediately.
