- 1 1/2 cups orzo pasta
- 2 ripe avocados, diced
- 1 1/2 cups cherry tomatoes, halved
- 1/2 cup red onion, finely diced

- 2 tablespoons fresh parsley, chopped
- 1/4 cup extra-virgin olive oil
