Ingredients
- 2 ripe avocados, pitted and peeled
- 1 egg yolk
- 1 tablespoon fresh lemon juice
- 1 tablespoon white wine vinegar
- 1 teaspoon Dijon mustard
- 1/2 cup neutral oil, such as avocado or light olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 2 tablespoons water, as needed

In a food processor or blender, combine the avocados, egg yolk, lemon juice, vinegar, and Dijon mustard. Blend until smooth and creamy, scraping down the sides as needed.
