Ingredients

  • 2 medium eggplants
  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • salt
  • pepper
  • 1 tbsp chopped fresh parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pierce eggplants with a fork and place on a baking sheet. Roast for 45 minutes until skin is charred and flesh is soft.
  3. Allow eggplants to cool, then peel and discard the skin.
  4. In a food processor, combine eggplant flesh, tahini, lemon juice, garlic, olive oil, a pinch of salt, and pepper. Blend until smooth.
  5. Taste and adjust seasoning with more salt or pepper if needed.
  6. Transfer Baba Ganoush to a serving dish and garnish with chopped parsley.
  7. Serve with pita bread or raw vegetables.
