These burgers combine the tender, binder-rich texture of meatloaf with the charred crust of a grilled patty, all wrapped in crisped bacon. A sticky BBQ glaze and melted sharp cheddar finish each one, making them a hearty centerpiece for backyard cookouts or weeknight dinners that want something more substantial than a plain burger.

Ingredients

  • 1 1/2 pounds ground beef, 80/20
  • 1/2 cup plain breadcrumbs
  • 1 egg
  • 1/4 cup whole milk
  • 1/4 cup yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 8 slices bacon
  • 2/3 cup barbecue sauce
  • 4 slices sharp cheddar cheese
  • 4 hamburger buns
  • 4 leaves lettuce
  • 4 slices tomato
  • 1 tablespoon unsalted butter, melted, for buns

Method

  1. In a large bowl, combine the ground beef, breadcrumbs, egg, milk, diced onion, garlic, Worcestershire sauce, salt, pepper, and smoked paprika. Mix gently with your hands until just combined.

  2. Divide the mixture into 4 equal portions and shape into patties about 1 inch thick, pressing a slight dimple in the center of each so they cook flat.

  3. Wrap 2 slices of bacon around the edge of each patty, securing the ends with a toothpick.

  4. Heat a 9-inch skillet or grill over medium heat. Cook the patties for 6 to 7 minutes per side, turning occasionally to crisp the bacon on all edges, until the internal temperature reaches 160°F.

  5. Brush the tops of the patties generously with barbecue sauce during the last 2 minutes of cooking, then lay a slice of cheddar on each and cover the skillet or grill until melted.

  6. Remove the patties from heat and rest for 3 minutes. Remove the toothpicks.

  7. Brush the cut sides of the buns with melted butter and toast in the skillet, cut-side down, for 1 to 2 minutes until golden.

  8. Assemble each burger on a toasted bun with lettuce, tomato, and a bacon-wrapped cheddar patty. Drizzle with additional barbecue sauce and serve warm.
