These onion rings get their crunch from a seasoned panko breading and a hot oven instead of a pot of oil. A quick flour and egg dredge helps the crumbs cling to each sweet onion slice, and a wire rack keeps the bottoms from going soggy. Serve them as a snack, appetizer, or burger topper with a dipping sauce on the side.

Ingredients

  • 2 large sweet onions, sliced into 1/2-inch rings
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 3 large eggs
  • 2 tablespoons milk
  • 2 cups panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 cooking spray or oil for coating

Method

  1. Preheat the oven to 425°F and set a wire rack inside a rimmed baking sheet. Lightly coat the rack with cooking spray.

  2. Separate the onion slices into individual rings and set aside.

  3. In a shallow bowl, whisk together the flour, salt, pepper, garlic powder, and paprika.

  4. In a second shallow bowl, whisk together the eggs and milk.

  5. In a third shallow bowl, combine the panko breadcrumbs and parmesan cheese.

  6. Dredge each onion ring in the flour mixture, shaking off excess, then dip into the egg mixture, and finally press into the panko mixture to coat evenly.

  7. Arrange the coated onion rings in a single layer on the prepared wire rack, leaving space between each ring.

  8. Lightly spray the tops of the onion rings with cooking spray.

  9. Bake until golden brown and crisp, flipping halfway through.

  10. Remove from the oven and let cool on the rack for 5 minutes before serving.
