This banana pudding builds a silky stovetop custard, then layers it with vanilla wafers and sliced bananas until the cookies soften to a cake-like texture. It chills for several hours so the flavors meld, making it a make-ahead dessert ideal for potlucks, barbecues, or Sunday dinner.

Ingredients

  • 3/4 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/8 teaspoon salt
  • 3 large egg yolks
  • 2 cups whole milk
  • 1 tablespoon unsalted butter
  • 1 1/2 teaspoons vanilla extract
  • 1 box vanilla wafer cookies
  • 4 ripe bananas, sliced
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Method

  1. In a 6-quart saucepan, whisk together the granulated sugar, flour, and salt.

  2. Whisk in the egg yolks and milk until smooth with no lumps remaining.

  3. Cook over medium heat, whisking constantly, until the mixture thickens and coats the back of a spoon, about 8 to 10 minutes.

  4. Remove from heat and stir in the butter and vanilla extract until the butter melts and the custard is smooth.

  5. Press a piece of plastic wrap directly onto the surface of the custard and let it cool for 15 minutes at room temperature.

  6. Arrange a layer of vanilla wafers across the bottom of a 9x13-inch dish, followed by a layer of sliced bananas.

  7. Spread one-third of the custard over the bananas and wafers, smoothing it into an even layer.

  8. Repeat the layering two more times with remaining wafers, bananas, and custard, ending with a layer of custard on top.

  9. Cover the dish and refrigerate until fully chilled and set, at least 4 hours or overnight.

  10. Just before serving, beat the heavy cream and powdered sugar in a chilled bowl until soft peaks form, about 3 minutes.

  11. Spread or pipe the whipped cream over the top of the pudding and garnish with additional vanilla wafers before serving.
