Ingredients

  • 2 cups refried beans
  • 4 large flour tortillas
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1 tablespoon vegetable oil
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup salsa, for serving
  • 1/4 cup sour cream, for serving

Method

  1. In a small saucepan over medium heat, warm the refried beans with cumin, garlic powder, and chili powder, stirring occasionally, until heated through and smooth.

  2. Lay out the tortillas on a clean work surface and spread about 1/2 cup of the warmed beans down the center of each.

  3. Sprinkle the cheddar and Monterey Jack cheese evenly over the beans on each tortilla, then top with chopped cilantro.

  4. Fold in the sides of each tortilla, then roll from the bottom up to form a tight burrito, tucking the filling in as you go.

  5. Heat the vegetable oil in a 9-inch skillet over medium heat. Place the burritos seam-side down in the skillet and cook until golden and crisp.

  6. Flip the burritos and cook the other side until golden and the cheese has fully melted inside.

  7. Transfer burritos to a cutting board, slice in half on the diagonal, and serve warm with salsa and sour cream.
