This yeasted, yogurt-enriched dough rests until airy and pliable, giving fried bhature their signature puff and chew.   • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup plain yogurt
  • 2 tablespoons vegetable oil, plus more for greasing
  • 1/3 cup warm water, plus more as needed

Method

  1. In a large bowl, whisk together the flour, sugar, baking soda, and salt.

  2. Add the yogurt and 2 tablespoons of oil to the flour mixture, and mix with your fingers until crumbly.

  3. Gradually add the warm water, kneading until a smooth, soft dough forms, about 5 minutes. Add extra water 1 teaspoon at a time if the dough feels dry.

  4. Rub a thin layer of oil over the dough, cover the bowl tightly with a damp cloth or plastic wrap, and let it rest in a warm spot until soft and slightly puffed, at least 4 hours.

  5. Once rested, punch down the dough gently and divide into 8 equal portions, rolling each into a smooth ball. Keep covered until ready to roll and fry.
