Ingredients
- 1 cup birch syrup
- 2 tablespoons unsalted butter
- 1 tablespoon apple cider vinegar
- 1 teaspoon soy sauce
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon kosher salt

Combine the birch syrup, butter, apple cider vinegar, soy sauce, black pepper, and salt in a small saucepan over medium heat.

Bring the mixture to a simmer, whisking occasionally until the butter melts and the ingredients are fully combined.

Reduce heat to low and simmer, stirring occasionally, until the glaze thickens slightly and coats the back of a spoon.

Remove from heat and let cool for a few minutes; the glaze will continue to thicken as it cools.

Brush or spoon the glaze over roasted meats, salmon, or vegetables during the last few minutes of cooking, or serve warm on the side.
