These patties combine mashed black beans with sautéed onion, garlic, and warm spices, then get bound with breadcrumbs and egg before a hot skillet sear gives them a crisp crust. Serve them on a bun with avocado, tucked into tortillas, or over greens for a quick weeknight dinner.

Ingredients

  • 2 cans black beans, drained and rinsed (15 oz each)
  • 1 tablespoon olive oil, plus extra for frying
  • 1/2 cup yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1/2 cup breadcrumbs
  • 1/4 cup cilantro, chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice

Method

  1. Heat 1 tablespoon olive oil in a 9-inch skillet over medium heat. Add the onion and cook, stirring occasionally, until softened, about 4 minutes.

  2. Add the garlic and cook, stirring, until fragrant, about 1 minute. Remove from heat and let cool slightly.

  3. In a large bowl, mash the black beans with a fork or potato masher, leaving some texture rather than a smooth puree.

  4. Add the cooked onion and garlic, egg, breadcrumbs, cilantro, cumin, smoked paprika, salt, pepper, and lime juice to the mashed beans. Mix until evenly combined.

  5. Divide the mixture into 4 equal portions and shape each into a patty about 3/4 inch thick. Chill the patties in the refrigerator for 15 minutes to help them firm up.

  6. Heat 2 tablespoons olive oil in the skillet over medium heat. Add the patties and cook until a deep golden crust forms on the bottom, about 4 minutes.

  7. Flip the patties carefully and cook until golden and heated through, about 4 minutes more.

  8. Transfer the patties to a plate lined with paper towels to drain briefly, then serve warm.
