This queso blends melted cheese with mashed black beans for a thicker, heartier dip that clings to chips. A splash of milk keeps it smooth and pourable, while diced tomatoes and green chiles add brightness. Serve warm at game day gatherings or as a quick weeknight snack.

Ingredients

  • 1 tablespoon unsalted butter
  • 1/2 small white onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (10 ounces) diced tomatoes with green chiles, undrained
  • 12 ounces sharp cheddar cheese, shredded
  • 8 ounces Monterey Jack cheese, shredded
  • 1/2 cup whole milk
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 2 tablespoons fresh cilantro, chopped

Method

  1. Melt the butter in a 6-quart saucepan over medium heat. Add the onion and cook, stirring occasionally, until softened, about 4 minutes.

  2. Add the garlic and cook, stirring, until fragrant, about 30 seconds.

  3. Add the black beans and diced tomatoes with green chiles. Using a fork or potato masher, roughly mash about half of the beans, leaving the rest whole.

  4. Reduce heat to low and stir in the cheddar and Monterey Jack cheeses a handful at a time, letting each addition melt before adding more.

  5. Stir in the milk, cumin, chili powder, and salt. Cook, stirring frequently, until the queso is smooth and heated through, 4 to 5 minutes.

  6. Remove from heat, transfer to a serving bowl, and sprinkle with cilantro. Serve warm with tortilla chips.
