Ingredients
- 2 cups old-fashioned rolled oats
- 1/2 cup vanilla protein powder
- 1/4 cup chia seeds
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup creamy almond butter
- 1/2 cup honey
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 3/4 cup dried blueberries

Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.

In a large bowl, stir together the oats, protein powder, chia seeds, cinnamon, and salt.

In a small saucepan over low heat, warm the almond butter, honey, and coconut oil, stirring until smooth and fully melted, about 3 minutes.

Remove from heat and stir in the vanilla extract.

Pour the warm almond butter mixture over the oat mixture and stir until fully combined and no dry patches remain.

Fold in the dried blueberries, distributing them evenly through the mixture.

Transfer the mixture to the prepared pan and press firmly and evenly into the bottom using a spatula or the back of a measuring cup.

Cover and refrigerate until firm, at least 2 hours.

Lift the slab from the pan using the parchment overhang and cut into 16 bars.
