- 1 1/2 cups apple cider
- 1/2 cup bourbon
- 1/2 cup packed brown sugar
- 3 tablespoons unsalted butter
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 tablespoon cornstarch
- 1 tablespoon water

In a 6-quart saucepan, combine the apple cider, bourbon, brown sugar, butter, apple cider vinegar, Dijon mustard, cinnamon, and salt.

Bring the mixture to a boil over medium-high heat, stirring occasionally to dissolve the sugar.

Reduce the heat to medium-low and simmer, stirring occasionally, until reduced by about a third.

In a small bowl, whisk the cornstarch and water together until smooth, then stir into the simmering glaze.

Continue simmering until the glaze thickens enough to coat the back of a spoon.

Remove from heat and let cool slightly before brushing onto meat or transferring to a jar for storage.
