This glaze simmers bourbon and maple syrup with butter and a touch of brown sugar until glossy and thick enough to coat a spoon. It works well brushed over roasted ham, grilled salmon, pork chops, or bacon during the last few minutes of cooking. The alcohol cooks off as it reduces, leaving deep caramelized flavor without a harsh bite.
Ingredients
- 1 cup pure maple syrup
- 1/2 cup bourbon
- 4 tablespoons unsalted butter
- 2 tablespoons brown sugar, packed
- 1 tablespoon soy sauce
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Method
-
In a 6-quart saucepan, combine the maple syrup, bourbon, butter, brown sugar, soy sauce, Dijon mustard, garlic powder, salt, and pepper.
-
Set the pan over medium heat and bring the mixture to a gentle boil, stirring occasionally until the butter melts and the sugar dissolves.
-
Reduce heat to medium-low and simmer, stirring occasionally, until the glaze reduces by about a third and coats the back of a spoon.
-
Remove from heat and let cool slightly; the glaze will continue to thicken as it cools.
-
Brush or spoon the glaze onto meat or fish during the last 5 to 10 minutes of grilling, roasting, or baking, or serve warm on the side.
