Ingredients
- 1 large head cauliflower, cut into large florets
- 3 tablespoons olive oil
- 4 cloves garlic, thinly sliced
- 1 small yellow onion, thinly sliced
- 1/2 teaspoon red pepper flakes
- 1 1/2 cups vegetable broth
- 1/4 cup dry white wine
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped
- 1/4 cup grated Parmesan cheese

Heat olive oil in a 9-inch skillet or wide braising pan over medium-high heat.

Add the cauliflower florets in a single layer, cut side down, and sear until golden brown, 4 to 5 minutes.

Flip the florets, add the onion and garlic, and cook until the onion softens and the garlic is fragrant, about 3 minutes.

Sprinkle in the red pepper flakes, salt, and black pepper, stirring to coat the vegetables.

Pour in the vegetable broth and white wine, scraping up any browned bits from the bottom of the pan.

Bring the liquid to a simmer, then cover the pan and reduce heat to low.

Braise the cauliflower, covered, until very tender when pierced with a fork, 25 to 30 minutes.

Uncover and simmer an additional 5 minutes to reduce the liquid slightly.
