  • 3 tablespoons vegetable oil
  • 10 cloves garlic, minced
  • 1 1/2 cups chicken stock

  • 1 tablespoon oyster sauce

  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1/4 teaspoon white pepper
  • 1 teaspoon toasted sesame oil

Method

  1. Mince the garlic finely and set aside.

  2. In a 6-quart saucepan, heat the vegetable oil over medium-low heat until shimmering.

  3. Add the minced garlic and cook, stirring constantly, until golden brown and fragrant, about 4 to 5 minutes. Watch closely so it doesn't scorch.

  4. Pour in the chicken stock, soy sauce, oyster sauce, sugar, and white pepper. Stir to combine and bring to a simmer.

  5. In a small bowl, whisk the cornstarch and water together until smooth to make a slurry.

  6. Whisk the cornstarch slurry into the simmering sauce and cook, stirring, until thickened and glossy, about 1 to 2 minutes.
